Mediterranean Bowl with Homemade Tzatiki

Mediterranean Bowl with Homemade Tzatiki
Makes 4 servings | Gluten-free
Ingredients for the Mediterranean Beef:
- 500g grass-fed beef mince
- 3 tsp Primal Energy beef liver powder
- 1/2 tbsp olive oil
- 1/2 a red onion: thinly diced
- 1/2 a capsicum: diced
- 1/2 a zucchini: diced
- 1.5 tsp minced garlic
- Handful of fresh parsley: roughly chopped
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp ground coriander seed
- Salt and pepper to taste
Ingredients for the Homemade Tzatziki:
- 1/2 a cucumber: grated
- Juice and zest of a 1/4 lemon
- 2 tbsp fresh dill: roughly chopped
- 1/2 cup Full-fat Greek yoghurt
- 1 tsp ground coriander seed
- Salt and pepper to taste
Method:
- In a medium pan, over medium-high heat add the olive oil, along with the chopped capsicum, zucchini, onion and minced garlic. Cook until soft and fragrant, around 3 minutes.
- Add in the beef mince and cook until just browned. Add in the smoked paprika, cumin, ground coriander seed, salt, pepper and Primal Energy beef liver powder. Mix until well combined and simmer for another 10 minutes.
- Once cooked, add the chopped parsley and stir to combine.
- To make the homemade tzatziki, simply add all ingredients together and mix well to combine.
- To make your Mediterranean bowl, start with a base of quinoa, brown rice or white rice. Add your Mediterranean mince and whatever fresh ingredients you'd like (we used cherry tomatoes, cucumber, rocket and fresh red onion). Top with the tzatziki and more fresh herbs. Dig in and enjoy!
