Stewed Apple Overnight Oats

Ingredients for the oats:
- 3 tbsp rolled organic oats
- 1 tbsp chia seeds
- 1 tbsp flaxmeal
- 1 serve of Primal Iron Beef Spleen Powder
- 1 tbsp collagen or protein of choice (optional)
- 1.5 tsp organic ground cinnamon
- 1.5 tsp of vanilla extract
- 1.5 tbsp organic Greek yoghurt
- 1/4 cup milk of choice
To top: Chopped walnuts, extra yoghurt and pepitas
- 1 pink lady apple, sliced into rough cubes
- 1.5 tsp organic ground cinnamon
- Splash of maple syrup (optional)
- 1 tbsp water
- To your jar or small bowl of choice, add all the ingredients for the overnight oats. Mix well to combine, cover and set in the fridge for a minimum of 1 hour to thicken (setting overnight is best).
- While the overnight oats are setting, make the stewed apples. In a small saucepan over medium heat, add all the stewed apple ingredients. Stir and cook until the apples are soft and have absorbed all the flavour. Transfer to a bowl, and set aside to cool (this creates the prebiotic effect!).
- Assemble once everything is ready. Add extra yoghurt, the stewed apples and then the chopped walnuts and pepitas on top of the overnight oats. Dig in and enjoy!
