Bacon & Egg Liver Muffins

We benchmark our recipes on key 3 principles... they have to be quick, nutritious and delicious. This bacon & egg liver muffin recipes checks all of these boxes with a big tick on the last one :)

Ingredients: Makes 6

  • 6 rashes of bacon  
  • 3 springs onion stalks, or chives (or herb of your choice)
  • 4 eggs 
  • 1 tbsp freeze-dried liver powder
  • 1 tsp onion and / or garlic powder 
  • 1/4 tsp sea salt 


  1. Preheat oven to 200C
  2. Line a muffin tray with either patty cases or small pieces of baking paper, or grease a silicon muffin tray with butter, coconut oil, or tallow. Wrap a piece of bacon around the edge of the inside of each muffin hole. 
  3. Finely chop spring onion, set aside. Whisk eggs in a bowl, add liver powder, onion powder, salt, mix until combined. Mix in the chopped spring onions and pour mixture into the middle of the bacon lined muffin holes. 
  4. Cook in the oven for 20 mins.
