Bacon & Egg Liver Muffins

Ingredients: Makes 6
- 6 rashes of bacon
- 3 springs onion stalks, or chives (or herb of your choice)
- 4 eggs
- 1 tbsp freeze-dried liver powder
- 1 tsp onion and / or garlic powder
- 1/4 tsp sea salt
Method:
- Preheat oven to 200C
- Line a muffin tray with either patty cases or small pieces of baking paper, or grease a silicon muffin tray with butter, coconut oil, or tallow. Wrap a piece of bacon around the edge of the inside of each muffin hole.
- Finely chop spring onion, set aside. Whisk eggs in a bowl, add liver powder, onion powder, salt, mix until combined. Mix in the chopped spring onions and pour mixture into the middle of the bacon lined muffin holes.
- Cook in the oven for 20 mins.
