Love sushi but want some real nutritional punch without the sugar/carb spikes? This primal bacon sushi recipe takes the concept of sushi to the next level :)
Ingredients: Makes 6-8 sushi pieces
- 6-8 rashes of bacon
- 250g beef mince
- 1 tsp freeze-dried beef liver powder
- ½ tsp smoked paprika, cumin or spice of choice
- ¼ tsp salt
- 1 tsp psyllium husk (optional)
- BBQ sauce of choice
- Sesame seeds or toasted coconut flakes (optional)
Method:
- Layer bacon on a wooden sushi mat
- Mix mince with smoked paprika, liver powder, salt and psyllium husk
- Spread a thin layer of meat over the bacon, leaving 1-2cm’s of bacon around the edges
- Optional: put some cheese in the middle (I used goat and ewe’s halloumi - pre pan fried)
- Roll the bacon and put in the oven for 10-15 minutes. 5 minutes in, take it out and glaze it with either olive, coconut oil or tallow - or bbq sauce of choice.
- Take out of the oven and sprinkle with toasted coconut flakes
- Slice into 6-8 round pieces, like sushi and serve with sauces of choice, or on its own!
