Sarah's Honey-Glazed Meatloaf
We love meatloaf, and we also love pairing meat with honey. Sarah (our in-house nutritionist) has a passion for cooking and her meatloaf recipe will become your new favourite :)
Ingredients:
- 500g beef mince
- 2 tsp Primal Energy Beef Liver Powder
- 1 egg
- 1 tsp sea salt
- 1 tsp dried or fresh herbs, ie: thyme, parsley, rosemary
- 2 sprigs fresh spring onion (optional)
- 1 tbsp coconut aminos (or soy sauce)
- 2 tsp smoked paprika
- 1 tbsp psyllium husk
- ½ tsp chilli flakes (optional)
- 1 tbsp olive oil, tallow, ghee or coconut oil
- 1 brown onion, diced (or 1 tsp onion powder)
- 2-3 cloves garlic, minced
Honey glaze
- 1 tbsp honey
- 2 tsp olive oil
- 2 tsp red wine vinegar
Method:
- Preheat oven to 180C
- Mix beef mince with beef liver, egg, salt, herbs, coconut aminos, paprika, psyllium husk and chili flakes (if using) in a medium sized bowl. You may need to get your hands into it to mix it well.
- Heat olive oil, ghee, tallow or coconut oil in a pan over medium heat and saute onion and garlic for 1-2 minutes. Mix through the meat mixture. (*if you want to save time and skip this step, use organic onion powder and minced garlic instead).
- Mix the honey glaze ingredients together in a small ramekin.
- Pour into a baking paper lined loaf pan, drizzle the honey glaze on top and cook for 1 hour.
- Leave to rest for 10-20 minutes, serve with sauce of choice.
