Sarah's Honey-Glazed Meatloaf

We love meatloaf, and we also love pairing meat with honey. Sarah (our in-house nutritionist) has a passion for cooking and her meatloaf recipe will become your new favourite :)

Ingredients

  • 500g beef mince 
  • 2 tsp Primal Energy Beef Liver Powder 
  • 1 egg 
  • 1 tsp sea salt 
  • 1 tsp dried or fresh herbs, ie: thyme, parsley, rosemary 
  • 2 sprigs fresh spring onion (optional) 
  • 1 tbsp coconut aminos (or soy sauce) 
  • 2 tsp smoked paprika 
  • 1 tbsp psyllium husk 
  • ½ tsp chilli flakes (optional) 
  • 1 tbsp olive oil, tallow, ghee or coconut oil
  • 1 brown onion, diced (or 1 tsp onion powder)
  • 2-3 cloves garlic, minced

Honey glaze

  • 1 tbsp honey 
  • 2 tsp olive oil
  • 2 tsp red wine vinegar 

Method

  1. Preheat oven to 180C
  2. Mix beef mince with beef liver, egg, salt, herbs, coconut aminos, paprika, psyllium husk and chili flakes (if using) in a medium sized bowl. You may need to get your hands into it to mix it well. 
  3. Heat olive oil, ghee, tallow or coconut oil in a pan over medium heat and saute onion and garlic for 1-2 minutes. Mix through the meat mixture. (*if you want to save time and skip this step, use organic onion powder and minced garlic instead).
  4. Mix the honey glaze ingredients together in a small ramekin. 
  5. Pour into a baking paper lined loaf pan, drizzle the honey glaze on top and cook for 1 hour.
  6. Leave to rest for 10-20 minutes, serve with sauce of choice.
